I have had to go sugar-free for health reasons, I will do another post all about it soon, but you can bet that I was not missing out on pancake day so I did a bit of research and thought I would help anyone out that was also sugar-free. So lets get to it!
- 130g plain flour (I used Gluten-free Plain Flour)
- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 large egg
- 240ml milk
- Coconut oil (for frying)
I just simply popped it all in a nutribullet and was ready to go. Make sure the pan is nice and hot before you put the mixture in so everything cooks quickly and evenly.
Add lots of fruit and honey and YOU ARE WELCOME!
