Who doesn’t love Mary Berry! I was a huge fan of her on GBBO and admittedly have a few too many of her cooking books.
Over the Easter weekend I was in Bank Holiday bliss and fancied making a few desserts. This one caught my eye in her ‘Fool Proof Cooking‘ book. It was so delicious I just had to share it.
1 Lime – Juice and Rind
Double Cream – 300ml
Blend the Mango chunks into a puree
Whip the double cream until just done and the add 1/2 lime juice and lemon curd. Continue to mix together.
Layer the two into a glass starting with the mango and then finishing with the cream. Place some Mango chunks on top and grate some lime and voila.
